I love my weeknight chuck roast that cooks all day in the slow cooker. Just season and add to your slow cooker and when you come home dinner is waiting! All you need to do is add your favorite sides; most of them can also be made in advance.

  • Season beef chuck roast with sea salt and black pepper; put into the crock of a slow cooker with onion quarters and garlic cloves. Pour beef broth and vegetable broth over the roast. Lay bay leaves and thyme atop the roast.

  • Cook on Low for 7 to 8 hours.

Cook's Note:

If you have a large enough slow cooker, buy a big roast or 2 smaller ones and make several other meals for the rest of the week or freeze and save for later! The slow cooker is on so why not fill it with yummy food?

Use 2 teaspoons dried thyme in place of fresh, if preferred.

This yields a very tender roast. Mine was done in 6 hours, and it fell apart when removing it from the cooker. I wished for a bit more flavor, and I believe that less liquid would help. I did brown the roast for better color before putting it in the crock. Read More

I made this and thought it was very flavorful can t believe someone said it lacked flavor. This has become a household favorite. Love all the broth just added a little cornstarch slurry to extra and it made an awesome gravy to go over the roast and mashed potatoes! Read More

I loved it after I made some changes to the recipe! First I cut the beef broth down to 1 cup and the vegetable broth down to 1/2 cup and added a heaping teaspoon full of "Better Than Bouillon" to it then I added more salt, more pepper and garam masala and two more onions and 3 more garlic cloves because I love garlic. I thought it was great after giving it more flavor we ate on it for two nights. Read More
