Cool Summer Salad

"With the weather getting way too hot in Texas, the search is on to find food that goes great with BBQ and light enough not to weigh you down in the heat. I had this recipe on my phone for quite some time and I'm not sure where it came from, but boy was it a hit!"

  1. Toss romaine lettuce, Swiss Cheese, cashews, apple, pear, and cranberries together in a large salad bowl.
  2. Whisk vegetable oil, sugar, lemon juice, poppy seeds, red onion, and salt together in a bowl until dressing is smooth. Pour dressing over salad and toss to coat.

We LOVED this salad! I made the dressing earlier in the day to allow the flavors to blend and ensure that the sugar was completely melted. Great combo of textures and flavors...I will def be mak...

Wonderful salad, but I would use only half the dressing and double the amount of romaine.

Used slightly less fruit but was delicious. Did not have poppy seeds but dressing was still great.

Everyone loved this salad and wanted the recipe. I made the dressing the day before and used 9 oz of romaine. Will definitely make again.
