A great strawberry cake recipe that I use for cupcakes. I use the cream cheese icing from this site as a topper. Top with blueberries for a 4th of July theme. Endless possibilities.

  • Preheat oven to 325 degrees F (165 degrees C). Grease 24 muffin cups or line with paper muffin liners.

  • Beat sugar, pureed strawberries, oil, eggs, and vanilla extract in a bowl with an electric mixer until smooth. Add flour, mixing until just incorporated. Stir food coloring into strawberry batter until color is even. Divide batter into prepared muffin cups.

  • Bake in the preheated oven until a toothpick inserted into the center comes out clean, 15 to 20 minutes. Cool in the pans for 10 minutes before removing to cool completely on a wire rack.

I love them. Easy to do and delicious. Its nice and moist maybe a little heavy (but has real fruit no artificial flavors) is part of a fruit cupcake. We used a fresh strawberry frosting and was amazing. I guess I can use the same recipe with other fruits. 100% recommended.. Read More

I really enjoyed making it. It was simple and easy to follow. Tasted great but I would say add a lot more than 3 drops of Red food dye if you want it to come out pink or red. Mine were kind of greyish for the first batch and when I added 3 more drops they were a little more pink but still not super pink. Read More

These were delicious! I ended up having to bake them for an extra 10 minutes past the allotted time but they ended up being a hit for my son s birthday.
