A great tasting salad to bring to a summer picnic or potluck table. For an extra kick, add 1 tablespoon taco seasoning and/or 1/2 cup grated cheddar or Kraft® Mexican-blend grated cheese. For a nice addition of color, substitute half the red pepper with yellow or orange pepper.

So simple. I used yellow orange and red peppers as well as a little bit of green pepper. I also added celery and ground pepper. Not having to blanch the cauliflower was a bonus. I let it sit in the fridge covered overnight and it was just the right crunch with beautifully melded flavours the next day. Read More

This was an interesting combination of ingredients! It worked out well though. Next time I would blanch the cauliflower to add a better texture and add the taco seasoning for more flavor. Definitely would make a nice addition to a summer menu! Read More

This was fantastic. Used Easy Coleslaw Dressing recipe rather than run out and buy some. Added can of rinsed black beans for protein and color contrast, but I'm sure it would be just a good without.
