Easter Ham Bone Soup

Great recipe but I did alter somewhat to adjust to my family’s taste. I sautéed the celery, a small diced onion and 2 smashed cloves of garlic to butter and olive oil in a stock pot. I added 4-5 sprigs of thyme and then added flour to make a roux before adding the ham stock, potatoes and ham. My family isn’t keen on cabbage so I used a bag of fresh peas when the potatoes were nearly done and used about 1/4c heavy cream. Super!!
