Cucumber Ice Cream Sorbet


Super fast, healthy ice-cream/sorbet. This cucumber-lemon ice is very refreshing.

  • 3 large cucumbers

  • 3 bananas

  • ½ cup confectioners' sugar

  • ½ cup lemon juice


  1. Blend cucumbers, bananas, confectioners' sugar, and lemon juice in a food processor until smooth; transfer to a container and freeze, at least 3 hours.

Cook's Note:

You can use any fruit and vegetable combination instead of cucumbers. Stock your freezer with frozen berries, etc. for an instant ice-cream. My favorites are: strawberries, bananas, peaches, or pears.

Freeze cucumbers and bananas ahead of time for instant ice-cream.
