In medium bowl, mix cooking sauce, peanut butter and soy sauce with whisk until smooth; set aside.
2. In 10-inch nonstick skillet, heat 1 tablespoon oil over medium heat. Cook chicken in oil about 8 minutes, until browned, turning once. Add sauce mixture to skillet; heat to boiling. Reduce heat; simmer covered 5 minutes; stirring occasionally or until the thickest part of the chicken breast reads at least 165 degrees F.
Lower heat to medium low; cook for 15 minutes, uncovered. Sprinkle with peanuts. Serve immediately.
