  • Stir potatoes, onion, eggs, flour, garlic powder, salt, and black pepper together in a bowl.

  • Heat a lightly oiled large skillet over medium heat. Drop potato mixture by large spoonfuls onto the skillet and cook until edges are dry and golden, 3 to 4 minutes. Flip and cook until browned on the other side, 3 to 4 minutes. Repeat with remaining potato mixture.

This is a great basic potato pancake recipe! I only had Yukon gold potatoes so I used those. I really wasn't sure of the size of potatoes to use so I only added 1 egg and mixed it up to see the consistency before adding the second and I ended up not needing the second it was perfect with just the one. These cooked up nice and crisp on the outside and soft and tasty in the middle. I will def be making these again YUM! Thanks for sharing.:) Read More

It was tasty. I used 4 gold potatoes which more than two old people could eat. I used a food processor, much easier. I used a vegetable spinner/dryer to get most of the water out. I also added a tablespoon of potato flour to help thicken the patties up. For the second batch the next day, I added an extra egg it still came out good. Read More
