This delicious, nutritious pudding is easy to make and easier to eat! Yum! Chia seeds have a crunchy/slippery texture which makes them fun to chew. Great for the kids as a healthy snack and dessert.

Instructions Checklist

  • Stir blended cocoa mixture and chia seeds together in a bowl. Let pudding sit until thickened, about 30 minutes. Transfer pudding to a serving bowl, cover with plastic wrap, and refrigerate until serving.

Cook's Notes:

You can add a bit of salt and vanilla if you like to bring out the taste. Also, I'm sure you can use any dried sweet dried fruit such as figs or raisins to substitute for the apricots.

Delicious! I used unsweetened Silk Coconut Milk instead of water, and I had to omit dried fruit as I'm trying to cut down on sugar. It wasn't very sweet but it was perfect if you like that sort of bitter dark chocolate flavor. I'm going to make more tonight! Read More

The walnuts and dried apricots made it a bit too chunky for my liking but the second batch I made without those pieces was creamy & delicious! Try coconut water instead of just plain water too. Read More
