  • Bring water and rice to a boil in a saucepan. Reduce heat to medium-low, cover, and simmer until the rice is tender and liquid has been absorbed, 20 to 25 minutes.

  • Heat a large pot over medium-high heat. Cook and stir beef, bell peppers, and onion in the hot skillet until browned and crumbly, 5 to 7 minutes; drain and discard grease.

  • Pour broth and tomato soup into the pot; add crushed tomatoes and mushroom pieces. Bring the soup to a boil, reduce heat to medium-low, cover the pot, and simmer the soup, stirring occasionally, until the vegetables are tender, 30 to 40 minutes.

  • Stir rice into the soup, breaking clumps into individual grains; cook until the rice is hot, about 5 minutes.

Although this was a nice base for unstuffed pepper soup it was somewhat bland. When I was done making it it wasn't quite up to my standards so I added the following: 2 Tbsps Worcestershire sauce 1 tsp Hungarian paprika 4 large garlic cloves 2 bay leaves 1/2 tsp black pepper 1/2 tsp salt. Cooked for 1/2 hour. Five stars after these additions. Read More

I used turkey burger instead of ground beef. I also used frozen broth drained off a roast made earlier so lots of flavor there. No mushrooms because I didn't have any. USED multicolored peers for color. Great comfort food. Topped with shredded sharp cheaddar. DELISH!! Read More

I modified this recipe using brown rice tomato sauce increased the broth to 4 cups and ommitted the mushrooms. I also sweated the pepper and onion a few minutes with the hamburger before adding other ingredients. Read More
