"Light, fresh French side dish I make frequently. Everyone asks what is this and how do you make it. Be careful not to brown your cucumbers. They should be translucent, not browned."

  1. Melt butter in a small skillet over medium-low heat; add cucumbers, tarragon, white pepper, and salt. Saute cucumber mixture until cucumber bits become translucent, 12 to 15 minutes.

I didn't skin or seed cucumbers - It was still good! Kids not crazy about it, but I liked it.

Very good. I had some large cubes and this was a great way to use them.
