  • Heat the oil in a 6-quart saucepot over medium-high heat. Add the onion and peppers and cook for 2 minutes or until tender-crisp, stirring occasionally.

  • Stir in the tomato paste, corn, beans, tomatoes, broth and chicken and heat to a boil. Reduce the heat to low. Cook for 5 minutes, stirring occasionally. Serve topped with crushed tortilla chips or strips, if desired.

I never made this version of Tortilla soup and thought to try it out on a freezing cold Chicago night since I had some leftover rotisserie chicken from yesterday. I added some basil to bring out the tomato flavors as well as some oregano, dried parsley, black pepper, and topped it off with cilantro, tortilla chips, and flaked Chihuahua cheese to melt on top of the soup. What's easier than soup? Put stuff in a pot, cover with broth, heat, and eat! Yay! This is a simple and good recipe. I browned some chicken first, then added the onions and a diced green pepper, then a diced chipotle, about 2 T of chili powder, 1 T of cumin, and 1 t of garlic powder. Then the beans, corn, and tomatoes, followed by vegetable broth, because that's what I had. I figured the spices I added would make up for not having "Mexican" broth. Turned out very flavorful.
