  1. Heat the oil in a 6-quart saucepot over medium-high heat. Add the onion and peppers and cook for 2 minutes or until tender-crisp, stirring occasionally.
  2. Stir in the tomato paste, corn, beans, tomatoes, broth and chicken and heat to a boil. Reduce the heat to low. Cook for 5 minutes, stirring occasionally. Serve topped with crushed tortilla chips or strips, if desired.

  • Serving Suggestion: Customize your soup with your favorite toppings! Try diced avocado, sour cream and/or chopped fresh cilantro. Serve with lime wedges on the side to add a twist of citrus.
  • Alternate Preparation: You can substitute 1 1/4 pounds skinless, boneless chicken breast halves, cut into cubes, for the cooked chicken. In Step 1, heat the oil over medium-high heat. Add the chicken and cook until browned, stirring occasionally. Add the onion and peppers and proceed as directed above.

This is the exact recipe off the back of the carton of Swanson Mexican infused chicken broth. It is very good though.

I never made this version of Tortilla soup and thought to try it out on a freezing cold Chicago night since I had some leftover rotisserie chicken from yesterday. I added some basil to bring out...

Delicious, made it for the first time, it was great, however I did add 1 extra can of Black beans. topped it off with a slice of avocado and lime. perfect.

I couldn’t find the broth mentioned here, so I used regular chicken broth and added fajita seasoning mix...it was delicious!

Awesome, I added 1 small can of hot “salsa Casera”( Herdez)

Great, easy recipe. I roasted the corn in a skillet with the onions and peppers and added some diced green pepper to that mix. The slightly charred, roasted corn was a nice adder.

I added some oregano, basil, parsley and garlic powder. It was excellent. My husband loved it too. We will make this again and again
