Directions

  • Combine chicken broth, chicken, carrots, apple, onion, celery, Parmesan cheese, and bay leaf together in a large pot. Bring to a boil, reduce heat to medium-low, and simmer until vegetables are soft, about 30 minutes.

  • Stir orzo into broth mixture. Cook, stirring occasionally, until orzo is cooked through but firm to the bite, about 11 minutes.

Made as written except my apple of choice was a granny smith. I like the tartness of them. This soup was good but I do feel it could use some herbs. I added seasoned salt as well after tasting. Unless the entire pot will be consumed immediately you will need to plan on more chicken broth. The orzo really absorbs it once it sits for a few minutes and you end up with no juice. Good soup and the apple adds a nice uniqueness to it. Read More
