My grandmother used to make these pickles, and they were a family favorite. It's a shame they have to sit for 2 weeks before they're ready, because when she opened them, they were gone in a day!

  • Place pickle pieces in original pickle jar.

  • Stir white sugar, cider vinegar, brown sugar, water, and pickling spice together in a saucepan. Bring to a boil; cook and stir to a syrup-like consistency, about 2 minutes.

  • Pour hot syrup mixture over pickles into pickle jar. Cool to room temperature before covering; store in the refrigerator for 2 weeks before serving.

I started out with half a batch as written and these were way too sweet for us. When I made the other half of the batch I left out the white sugar altogether and that was perfect for us. If you like really sweet pickles I think you will love this, If not, I recommend cutting back on the sugar. I did love how the tartness still came through from the original pickle. Read More
