  • Melt the chocolate chips, marshmallows, and margarine together in the top of a double boiler over simmering water, stirring frequently and scraping down the sides with a rubber spatula to avoid scorching. Remove chocolate mixture from heat.

  • Stir oats, coconut, and vanilla extract into the chocolate mixture.

  • Line a baking sheet with waxed paper. Drop chocolate mixture by teaspoonful onto sheet. Refrigerate until yummies are firm, at least 30 minutes.

I could only get 1/2 C of the coconut into the mixture; the dough just got too thick and stiff to absorb any more. They tasted fine... good enough to make again on a hot day when I don't want to turn the oven on. I am not a huge fan or no-bake cookies in general so maybe someone with different preferences would rate this higher. Read More
