  • Combine water, pumpkin seeds, and salt together in a pot; bring to a boil, reduce heat to low, and simmer until seeds are tender, about 10 minutes. Strain seeds, discarding water, and lightly pat seeds dry with a towel.

  • Spread pumpkin seeds out in a single layer on the prepared baking sheet. Sprinkle sugar, cinnamon, and ginger evenly over seeds.

  • Bake in the preheated oven, stirring every ten minutes, until seeds are fragrant and roasted, about 40 minutes.

This is a great use of pumpkin seeds. Next time I would coat the seeds in a bowl before putting them on the baking sheet just so that they are evenly coated and add a little more sugar to cater to my sweet tooth. Read More

At 20 minutes (325 degrees) baking time my pumpkin seeds started exploding all over my ove.I left them in the oven 10 more minutes th They're going in the trash. I would appreciate knowing what I did wrong. Read More

I added a lot more cinnamon as well as some Allspice Nutmeg & substituted White Sugar with Raw Sugar. I also increased the Oven Temperature to 425 for 10-15 minutes (mine roasted perfectly in 12 mins). The house even smelled delish!!! Read More

i mixed the pumpkin seeds oil spices sugar together in a bowl before putting them on the baking sheet. it was not as sweet as i expected but the seeds were well toasted and well covered with seasoning. in future i may try the recipe with a little more sugar.... Read More
