I came up with this recipe after playing around with some different recipes using soda instead of eggs and oil in cake mix. They're amazing and super easy!

This recipe makes 12 cupcakes with batter and cherry pie filling leftover. My boyfriend loves to eat the leftover batter (no eggs!). If you're making 24 cupcakes, just double the amount of whipping cream and confectioner's sugar, plus the optional filling and cherries on top!
I prefer a piping bag and a Wilton(R) 1M tip for frosting the cupcakes.
