  • Mix Brie cheese, plum tomatoes, basil, 1/2 cup olive oil, garlic, 1/2 teaspoon salt, and pepper in a bowl; cover bowl with plastic wrap and marinate for 2 hours.

  • Bring a large pot of water to a boil; add 1 tablespoon olive oil and 2 teaspoons salt. Cook bow-tie pasta at a boil, stirring occasionally, until cooked through yet firm to the bite, about 12 minutes; drain. Add pasta to cheese-tomato mixture; toss. Sprinkle pasta with Parmesan cheese.

Cook's Note:

To make as bruschetta, make as above and spoon onto slices of baguette and broil until cheese has just melted. Can also be served in bowl; allow guests to spoon mixture onto baguette slices and leave unwarmed.

Loved this! I cut the recipe down and used rotini pasta. I loved how the brie melted into the pasta. The whole family liked this which was odd b/c I'm the only one that likes brie in the house. I will def be making this again YUM! Thanks for sharing.:) Read More

I made this recipe and was not a fan. I love Brie cheese but the Brie really overpowered the other ingredients. I used half of the recommended amount and it was still too much. In my opinion fresh mozzarella would be a better choice that would enhance instead of overpower the other flavors. Read More

Delicious and flexible. Probably used half the amount of brie called for plus fresh mozzarella. Fresh basil would have kicked it up a notch or two but sadly only had dried. Used shells which held the melted cheese and marinade perfectly. Read More
