This was one of the first recipes I ever learned. It's easy and great for introducing kids or young adults to cooking. The best part is - it tastes great too! My family loves when I make this dish and the ease in which it's prepared is still appreciated all these years after it was first mastered.

  • Preheat oven to 375 degrees F (190 degrees C).

  • Bring a pot of water to boil; cook peas in the boiling water until cooked through, about 5 minutes. Drain.

  • Mix peas, sausage, corn, chili sauce, onion, basil, black pepper, and 1 3/4 cup Cheddar cheese together in a 3-quart casserole dish.

  • Bake in the preheated oven until casserole is bubbling, 30 to 40 minutes. Sprinkle remaining 1/4 cup Cheddar cheese over casserole and bake until cheese is melted, about 5 more minutes.

Cook's Note:

Another great tip - make ahead! This is my go-to casserole when I know I'll be away from my family for dinner. You can mix ahead the same day, or make and freeze to have on hand when in a pinch.

This turned out better than I thought. We did do a few things differently like browning the sausage with the onion in a pan then adding a little water and cooking the frozen peas and frozen corn before mixing with the chili sauce cheese and seasonings to bake. We made rice with the water from cooking the sausage/veggies and ate that with the casserole. Read More

Smoked Sausage Casserole Haiku: "Okay this was odd. Only made for one reason: had that chili sauce." So doing an ingredient search on AR for anything including Heinz Chili Sauce yielded this recipe that conveniently had other items that I typically have around but why did I not actually think about that combination of ingredients before starting to put this together? I browned the sausage w/ the onions (prefer smoked sausage a little more "done") and wouldn't have wanted raw onion bites floating around a casserole but followed everything else although nothing seemed to improve what turned out to be the most peculiar unappetizing casserole I think I've ever prepared. We picked at our plates and tossed the leftovers. Sorry for the less-than-thrilled review but my husband was in a fit of giggles when I served this it was just THAT weird. Read More
