  1. Put milk, banana, chia seeds, honey, vanilla extract, and sea salt in respective order in the blender; blend until smooth. Pour mixture into a bowl and refrigerate until thickened, at least 2 hours. Spoon mixture into small bowls to serve.

Easy, delicious, and all around awesome! I used vanilla soy milk instead and I think I'll be making this on a fairly regular basis from now on.

I substituted coconut milk for the flax milk, changed to 2 Tb of honey and 2 ripe bananas and added a half a lemon's worth of lemon juice, which brought all the flavors together nicely with some...

2 ripe banana's instead of 1, coconut milk (full fat), 1 tsp black strap molasses instead of sugar.

We made this with unsweetened flax milk to reduce the calorie content even lower, and it turned out great. I like that the pudding has a chocolaty taste to it.
