Vanilla-Pear Breakfast Oatmeal

  1. Drain canned pears, reserving syrup. Chop the pear slices. Bring water, drained syrup from canned pears and salt to a boil over medium-high heat in a medium saucepan. Stir in oats; reduce heat. Cook, uncovered, for 1 minute, stirring occasionally. Remove pan from heat.
  2. Stir in almonds, cinnamon and vanilla. Cover and let stand for 2 to 3 minutes to reach desired consistency.
  3. To serve, top each serving with chopped canned pears and raspberries. Sprinkle with brown sugar.


  • * To toast almonds, preheat oven to 350 degrees F. Place 1/4 cup slivered almonds in a shallow baking pan. Bake for 6 to 8 minutes or until lightly toasted, stirring once.

This was pretty good. My pears were not packed in syrup so mine wasn't as sweet as I would like. I added a spoonful of Truvia. I think I would not add the almonds if I were to make it again-just...

Very good and healthy. Don't need much brown sugar because the cinnamon and vanilla and sweetness of the pears (I used the light syrup kind) are sweet enough for me.
