  • Preheat oven to 325 degrees F (165 degrees C).

  • Drizzle olive oil into the bottom of a 9x13-inch baking dish. Arrange chicken thighs in the baking dish; drizzle about half the lemon juice onto chicken. Sprinkle half the garlic salt and half the Italian seasoning over chicken. Arrange potatoes around the perimeter of the baking dish, framing the chicken.

  • Cook in the preheated oven for 45 minutes. Reduce heat to to 300 degrees F (150 degrees C) and continue cooking chicken, turning every 30 minutes and seasoning with lemon juice, garlic salt, Italian seasoning, and water on the second turn, until chicken is very tender, 2 to 3 hours.

Remember, the key to this delicious dish is patience in cooking. You will need to make this dish on a day that you plan to be home. It is worth the time and effort! No need to touch potatoes during the cooking process, they will cook nicely staged around this dish.

I was VERY skeptical about the oven temp and the baking time so I lowered the temp to 300 for 45 then lowered it again to 250 for the extra hour I cooked it for. I knew when I checked it after the first 45 that the cook times seemed way off but I told my self (like an idiot) to follow the recipe! I pulled the pan out of the oven after an hour and the thighs were like jerky and the potato's were so crispy on the outside we had to use a steak knife to cut into them to eat the inside! Read More

We really like this recipe. Easy inexpensive and tasty! I used the same ingredients the recipe calls for but used only six chicken thighs.
