- Whisk vinegar, vegan mayonnaise, agave nectar, mustard seeds, Dijon mustard, salt, and pepper together in a bowl until dressing is smooth. Stir apples, kohlrabi, and carrots into dressing until evenly coated. Cover bowl with plastic wrap and refrigerate for flavors to blend, at least 1 hour.

Pretty tasty. Very different than any I’ve had before. I chopped a kohlrabi leaf and threw in for the color contrast too.
