These hearty, dude-pleasing nachos are bursting with flavor. The combination of the crunchy tortilla chips with the spicy buffalo chicken and the cool blue cheese dressing make the perfect accompaniment to a frosty cold beverage (or two!) and are great any time of day. The recipe serves 4, but sharing is optional!

  • Preheat oven to 400 degrees F (200 degrees C). Line a large, rimmed baking sheet with aluminum foil and spray with cooking spray.

  • Mix about 1/4 cup blue cheese dressing, cayenne pepper sauce, and butter in a bowl until well blended. Add chicken; toss to coat.

  • Spread tortilla chips evenly over prepared baking sheet. Sprinkle tomato, olives, onion, and jalapeno peppers over chips. Spread chicken mixture over vegetables and top with crumbled bacon.

  • Combine Mexican cheese blend and Monterey Jack cheese in a bowl; sprinkle evenly over chicken and tortilla chip mixture.

  • Bake in the preheated oven until cheese is melted and lightly browned, 10 to 15 minutes. Drizzle with remaining 1/2 cup blue cheese dressing and top with cilantro.

I recently made this dish and oh my goodness was it a winner with the whole family including my neighbors. I did make changes only because my family is not too fond of blue cheese so I substituted the dressing with ranch since when we eat chicken wings we eat them with ranch. These were such a hit that I made them the very next day and will be making them as an appetizer for Super Bowl. I will be making tons!!!!!! Everyone should at least try this recipe out if you love chicken wings and nachos you will definitely love this recipe!!!! Thank you for sharing this deliciousness with all of us I will definitely continue making these for the whole family and friends.

Bacon made it way too salty and wiped out protein flavor would eliminate it. Instead of blue cheese drizzle at end would do sour cream.

WOW this was such a unique take on nacho's...this coming from someone who loves everything "buffalo"! I did not use the bacon or the blue cheese dressing Instead I used ranch dressing with gorgonzola crumbles.

I made this recipe EXACTLY as written. I like many others feel it is unfair to judge a recipe based on YOUR version of it. I would give this five stars but DH gave it a big thumbs down. And I had heartburn (which I thought was totally worth it). I probably won't make this recipe again because hubby didn't like it but seriously I could probably eat it a couple of times per month!

These nachos are awesome! We change up the recipe a bit though... 1. No cooking spray (unless your pan really needs it) 2. Substitute Newman s Own Creamy Ceasar Dressing for the blue cheese dressing 3. Smart balance instead of butter 4. No onions 5. Less bacon bits 4 oz would be a ton we just sprinkle it on until it looks like enough 6. No cilantro. Then layer the nachos as we are putting them on the pan - chips toppings chips toppings. So good!

These were so awesome we did not even berate ourselves for the billion calories we consumed. Totally worth it. Better than any nachos we have eaten in restaurants.

The chips were chewy and flimsy when I would have preferred they stay crunchy but this tastes SO good I did not mind having to eat my nachos with a fork and kept going back for more.;)
