  1. Blend cider vinegar, catsup, white sugar, pimentos, green bell pepper, lemon juice, onion, mustard, and salt in a blender until smooth. Stream olive oil into the vinegar mixture while blending; blend until the dressing emulsifies.
  2. Pour dressing into a bowl, cover with plastic wrap, and refrigerate until chilled, at least 30 minutes.

This is so good, easy to make, and tastes just like French dressing from the store -- with 100% olive oil, instead of the usual (yucky) soybean oil. I didn't have pimentos or green bell pepper...
