  1. Cook and stir vegetables in oil in large skillet on medium heat 3 to 5 min. or until crisp-tender. Add Simmer Sauce and chips; mix well.
  2. Add eggs; cook 5 min. or until set, stirring occasionally.
  3. Top with Salsa and cheese. Remove from heat; cover. Let stand 5 min or until cheese is melted.
