A twist on the traditional shepherd's pie. I gathered ideas from family and friends and other recipes and came up with my own different and very tasty version of an old time favorite. Everyone eats this up likes it's a dessert!

  • Preheat oven to 375 degrees F (190 degrees C).

  • Place potatoes into a large pot and cover with salted water; bring to a boil. Reduce heat to medium-low and simmer until tender, about 15 minutes. Drain and transfer potatoes to a large bowl. Mash potatoes with 1 tablespoon butter using a potato masher or fork; season with salt and pepper.

  • Melt 1 tablespoon butter in a large skillet over medium heat. Cook and stir beef in the hot skillet until browned and crumbly, 5 to 7 minutes; drain and discard grease. Stir onion soup mix, chicken bouillon, and beef bouillon into ground beef; simmer until flavors blend, about 2 minutes. Add water if mixture is too dry.

  • Spread ground beef mixture into the bottom of a 2-quart casserole dish; top with corn, carrots, and peas. Spoon mashed potato mixture over vegetable layer; sprinkle with paprika.

  • Bake in the preheated oven for 20 minutes. Sprinkle Cheddar cheese over mashed potato layer; continue baking until cheese is melted and bubbling, about 10 more minutes.

Cook's Note:

Instant potatoes can be substituted for fresh potatoes. Follow the directions on the box to make the 5 to 6 serving size (2 2/3 cups).

Very simple recipe I modified it a bit though. What I did was use 2lbs of lean ground chuck cooked the beef and drained grease then I put half stick of butter in the pan along with 1 packet of McCormick Au Jus mix and a packet of Ranch dressing mix plus 1/2 tsp of Cayenne Pepper. Mix everything together until meat is all coated then of course I put it in a 3 qt casserole dish and put a pkg of french fried onions as the nest layer then of course the vegetables finally topping off with left over garlic smashed red potatoes(skin on) and of course the cheese. My 5 year old son is very picky about what he eats and he could not get enough of this. Read More

The hamburger on the bottom got way too over cooked in the baking dish. I would probably mix the meat with the veggies if I were going to try it again but I probably won't try it again as the family did not care for it. The potatoes tasted awesome though! Read More

It was awesome! I did use fresh carrots and blanched them in a steamed basket on top of boiling potatoes and frozen peas! Also added 2cloves of garlic to meat mixture, and some sour cream to the mashed potatoes. Also melted the cheese and then browned it on broil. Can't wait to eat the leftovers tomorrow! Tried this recipe and my family has wiped out the entire casserole each time I've made it. I substituted a package of mixed green beans corn & peas (cooked it first) and came out fantastic. Thought this was pretty good. I made the following changes: * Used 2 lbs ground beef (1 lb really not enough meat) * Added a little half and half, sour cream, and parsley to the mashed potatoes * Sautéed about 1/2 cup of diced raw onion in oil in pan, 5-6 minutes, then added meat * Used 1 tsp Better than Bouillon beef rather than a cube * Dissolved chicken bouillon cube in 1/4 cup hot water, then mixed with soup mix and beef bouillon before adding to meat * Sprinkled a bit of garlic powder on meat * Used one 14.5 ounce can of mixed peas and diced carrots, omitted the corn (not a big fan). Seems like the 3 cans of veggies that the recipe calls for would have been too much. * Mixed the peas and carrots together with meat in pan after draining * Added a few tablespoons of water to meat mixture to moisten it a bit * Sprinkled some dollops of butter on top of the mashed potatoes, after the paprika I used the whole packet of soup mix this time, but might consider reducing it to 1/2 or 3/4 of a packet next time (flavor was almost overpowering with the full packet) Read More
