  1. Preheat oven to 350 degrees F.
  2. Combine corn flakes, cheese, salt and pepper in pie plate.
  3. Evenly coat the chicken with the dressing then dredge in the corn flake mixture.
  4. Place the chicken on a parchment lines baking sheet and bake for 30 to 35 minutes until golden and crispy.

This works also with breadcrumbs or crushed croutons instead of cornflakes. I like to use a homemade dry ranch seasoning mix and omit the additional salt to keep the sodium down in this recipe. ...

This chicken was great! I used parmesan cheese instead of white cheddar, and half ranch/half mayonaise (ran out of ranch!) Tasted delicious! Slightly crunchy outside and juicy and tender inside.
