I enjoy making this because it's easy and colorful! This dish is great for a light dinner on a summer day. I serve steamed veggies with this.

  • Set oven rack 3 to 4 inches from the heat source and preheat the oven's broiler. Spray a broiler pan with cooking spray.

  • Arrange orange roughy fillets on the prepared broiler pan; season with salt and pepper.

  • Broil in preheated oven until fish is easily flaked with a fork, 9 to 12 minutes.

You can use a regular cucumber, but English cucumbers have a sweeter flavor.

This dish has an extremely strong odor due to the apple cider vinegar as well as the fish as it’s baking. Do not let this throw you. The dish is quite tasty when you have the mandarin orange relish and fish in your mouth it is absolutely sublime. I can’t eat cilantro so I did not add it. I also substituted fresh mandarin oranges (clementine) for the canned. The only down is the initial smell which is why the 4 star rating. Finicky family members liked it too so we will repeat it.
