  • Preheat oven to 400 degrees F (200 degrees C).

  • Bring water, 3/4 cup sugar, cornstarch, cinnamon, and nutmeg to a boil; stir until thickened, about 1 minutes. Reduce heat to medium and add apricots and 1 tablespoon butter. Simmer until heated through, about 5 minutes. Transfer mixture to a 9x13-inch baking dish.

  • Combine flour, 1/4 cup sugar, baking powder, and salt in a large bowl. Cut 7 tablespoons butter into flour mixture until mixture resembles a coarse crumb. Stir milk into crumbles until topping is just moistened. Spoon topping over apricot mixture. Sprinkle remaining 2 tablespoons sugar over topping.

  • Bake in the preheated oven until golden brown, 30 to 35 minutes.

I followed the recipe exactly except added the extra tablespoon of butter left in the stick. When did more butter harm anything? The result was perfect. Not runny (I cooked the syrup about 5 minutes instead of the 1 stated as I think that is a typo). The apricots were given to me from a friend's tree, and some where sweet and some were tart. This would be great with peaches too. The batter is perfect to me - a sweet biscuit dough. Definitely making this again. It makes a lot, so cut the recipe down for a smaller batch of apricots. The apricots were delicious prepared according to the recipe. It does have a thick cakey layer of cobbler which could be easily adjusted to preference. A great way to use up the buckets of apricots from our bountiful harvest! Read More
