I made this sandwich up one day and have never been able to enjoy traditional grilled cheese quite as much since. The tangy goat cheese and spicy-sweet mango chutney is an awesome combo, and sourdough bread lends to the flavor nicely. As a bonus, it is ridiculously quick and easy to make! Try pairing this with butternut squash soup; it's an even better combo than the old grilled cheese and tomato!

  • Spread goat cheese onto one side of one slice of bread and mango chutney on one side of the other slice of bread. Sandwich bread slices together around the goat cheese and chutney.

  • Melt the butter in a small skillet over medium-low heat. Cook sandwich in melted butter, pressing with the back of a spatula occasionally to assure the cheese melts, until the bread is golden brown, 2 to 3 minutes per side.

Cook's Note:

Pro-tip: Patak's(R) chutney (even the spicy kind) isn't really very spicy. There's just a mild zip to it. A zippier chutney might be even better!

This was wonderful! I've never had mango chutney before and I loved it in this sandwich. The combo of the melted goat cheese and the chutney were perfect together along w/ the buttery toasty bread...a definite keeper for when I have these ingredients on hand YUM! Thanks for sharing.:) Read More

I used what I had on hand which was a blackberry jalapeno jam. It was fantastic. I will make this again and vary it with other things. I think the mango would be amazing and plan to try that too. Read More

Surprised to find my favorite grilled cheese here! I actually had 2 for lunch today This simple recipe also works really well using extra-old or sharp white cheddar sandwiched between slices of homemade sourdough. I like adding some finely minced South East Asian type chilis as well small the red or green ones. I used to use store-bought mango chutney but now use my own that I've canned which makes this sandwich even better. Read More
