  • Preheat oven to 350 degrees F (175 degrees C). Season chicken breasts with poultry seasoning, salt, and black pepper.

  • Combine water, yellow rice mix, and soy sauce in a baking dish. Arrange chicken over rice and pour pineapples and juice over chicken.

  • Bake in the preheated oven until chicken breasts are no longer pink in the center and rice is tender, about 45 minutes. An instant-read thermometer inserted into the center of the chicken should read at least 165 degrees F (74 degrees C).

This was very good, simple and easy. The only thing I will add next time is a little cayenne or red pepper flake to give it a little heat and balance the sweetness of the pineapple. Great week night meal! Read More

I made this last night and my rice did not cook. Chicken and pineapples tasted fine. Added another 20 minutes to baking time and still some rice was still hard. I made in square baking pan-is that the problem? Will try again with a longer pan. Read More

Very good. I didn't have a yellow rice mix, so I used Minute Rice. With the water and pineapple juice, it was a little watery, so next time I'll use less water. I did as others suggested and added green peppers, onions, garlic and a little red pepper. Easy, colorful and good. Read More
