  • Preheat oven to 400 degrees F (200 degrees C). If using a pizza stone, place in oven to preheat.

  • Heat 1 tablespoon olive oil in a large skillet; cook and stir onion and garlic until tender, about 5 minutes. Add spinach and continue to cook and stir until all liquid has evaporated, 5 to 7 minutes. Remove from heat and season with basil, lemon juice, oregano, and pepper. Allow mixture to cool slightly.

  • Unroll pizza dough on preheated pizza stone or a large baking sheet and brush with remaining 1 tablespoon olive oil. Spread spinach mixture over dough, leaving a small border at the edge of the pizza crust. Top with 1 cup mozzarella cheese.

  • Press tomato slices into seasoned bread crumbs until coated; arrange tomatoes over pizza. Spread remaining 1 cup mozzarella cheese and feta cheese over tomatoes.

  • Bake in preheated oven until pizza crust is golden brown and cheese is melted, about 15 minutes.

This pizza didn't taste as good as it looked/sounded to me. I thought it would be an explosion of flavor but it really wasn't. I'd even added a base layer of some ricotta/spinach filling mixture I'd had left over from Spinach Manicotti. Don't get me wrong it was good (and worth trying if it looks good to you!) but it just isn't one I'll be craving/making again. THANKS for the recipe! Read More

2014: Loved this recipe!! I did not think my kids (3 & 18 months) would eat this but it was a big success! Used fresh tomatoes & basil from the garden. I missed where it said to coat the tomatoes with breadcrumbs but I do not think it needed it. Definitely adding this to our pizza night menu:) thank you for the recipe. This is a delicious pizza. We followed the recipe as is but I used a frozen dough crust and made pesto from another contributor. We cooked the crust on a pre-heated pizza stone on the grill, of course transferred from a peel. When the crust was nearly done, we added the topping and baked on grill until just starting to get golden. The vegetables were still crunchy. Thank you. I have shared it with many people. Read More

Although good it does need something to pump up the flavor. I think a good sprinkle of Greek seasoning over the entire pizza would add some flavor. I did use fresh spinach. Pretty tasty:) Read More
