  1. Prepare mashed potatoes following package directions, set aside to cool.
  2. Split jalapenos lengthwise and remove the seeds and membrane.
  3. Stuff with 2 tablespoons of the mashed potatoes and wrap with a bacon slice.
  4. Broil until bacon is slightly crisp

Good and easy. I did mix some sharp shredded cheddar in with the potatoes. Everybody in the family liked these.
