Poppy Seed Chicken Pasta Salad

"My boyfriend is not a fan of pasta salads and he couldn't get enough of it! You can omit the pasta and place salad on sandwich roll or bread for a yummy chicken salad sandwich."

  1. Bring a large pot of lightly salted water to a boil. Cook pasta in the boiling water, stirring occasionally, until cooked through but firm to the bite, 12 minutes; drain, rinse in cold water, and drain again.
  2. Toss pasta, chicken, onion, cranberries, celery, and almonds together in a salad bowl; drizzle with poppy seed dressing and stir to coat.

Made this recipe almost as is(added a little more chicken). It was great. Put a little curry powder in the leftovers, it was also great. Just a little different.

The dressing was way to sweet just using poppyseed. Needs salt and pepper as well. Use red onion for best balance. I use spiral pasta and omit nuts.
