Berry Good French Toast Bake


"This is a warm French toast dish my step-mom made once years ago, and my kids have never stopped asking for it. Now they are making it for their kids! Drizzle melted butter over each serving, sprinkle with powdered sugar, and serve with warm maple syrup. Strawberries can be used in place of blueberries."

  1. Grease a 9x13-inch baking dish.
  2. Beat eggs, milk, flour, sugar, cinnamon, vanilla, nutmeg, and salt in a large bowl with a hand mixer until smooth; add bread cubes and stir until well coated. Pour bread mixture into prepared baking dish. Top evenly with blueberries, pecans, and cream cheese cubes. Cover dish with plastic wrap and refrigerate 2 to 24 hours.
  3. Preheat oven to 400 degrees F (200 degrees C).
  4. Bake uncovered in preheated oven until golden brown, 20 to 25 minutes.

I made this in my SLOW COOKER, as I do not have a stove. I didn't soak overnight, just threw it all in there lol I adjusted the servings to 2, for just myself, and it took about 2 hours to cook....

Delicious. I made a few small changes. I used about 2/3 of a loaf of my own homemade whole wheat bread, and nearly doubled the blueberries. I only let it set to soak about 1 1/2 hours, and it ...

Turned out well. I used frozen blue berries instead. Could have used more sugar or syrup. Good looking dish and easy!

I made this for a smaller crowd, so I halved the recipe and instead of curbing the cream cheese, I softened it in the microwave, added cinnamon and sugar to it, and mixed it in in the pan before...

It was okay. Would be better with sweeter bread than the homemade sourdough I used and definitely still needed syrup.
