Smokey Parmesan Sweet Potato Chips

"After trying several potato chip recipes, this one is a collage of the most successful recipes I have tried. The recipe could easily be modified with additions of other spices to suit any taste or any meal. These are great with burgers and are much healthier than traditional chips!"

  1. Preheat oven to 375 degrees F (190 degrees C). Line a baking sheet with parchment paper.
  2. Peel sweet potato with a vegetable peeler and discard skin. Continue using peeler to create thin strips of sweet potato; transfer to a large bowl. Drizzle strips with olive oil; toss to coat. Mix Parmesan cheese, kosher salt, pepper, paprika, and garlic powder into sweet potato strips; toss to coat evenly. Spread coated sweet potato strips evenly onto the prepared baking sheet.
  3. Bake in the preheated oven until sweet potato chips are crispy, 20 to 25 minutes.

I just put everything in a gallon zip bag. These weren't in long enough so they weren't crisp.

The chips were too thin when I made them with the peeler. They cooked in ten minutes. But, I will make them again, just a little thicker. They tasted great!
