  • In large bowl stir together Simply Potatoes, carrot, onion, flour and salt. Stir in beaten eggs.

  • Heat oil in 12-inch nonstick skillet over medium heat. Drop four generous 1/4 cup pancakes of potato mixture into skillet; flatten slightly. Cook each pancake 2 to 3 minutes on each side or until golden brown, turning once. Cook remaining pancakes, adding additional oil to skillet if needed. Drain pancakes on paper towel. Serve with applesauce or sour cream if desired.

I added a good grind of fresh pepper and liked the addition of the shredded carrots. I used the scoop that I typically use for filling muffin tins which made it really easy and they all ended up the same size. I never would have known that these were shredded potatoes that I bought in the dairy section of the grocery store. Served with both sour cream and applesauce. This is everything you're hoping for in a potato pancake. The carrot flavor doesn't really come through but they came out beautifully. I made a portion of the recipe and used my cookie scoop for uniform size pancakes. A dollop of sour cream is the finishing touch. Read More
