Avocados are a nutrient-dense super food that everyone should eat more often. Unfortunately, store-bought guacamole often has low-avocado content and high calories, and homemade guacamole requires several other fresh ingredients, lots of chopping, and often added salt. This light, simple guacamole is quick and easy to make. Top tacos or any spicy, Mexican-style dish with a tablespoon or two for a heart-healthy bonus! Store in refrigerator.

Simple and tasty! I thought it was a little heavy on the lemon so I would reduce that a bit next time. I probably wouldn't make this all the time b/c I really love my guacamole but this was nice for something a little different! Thanks for sharing.:) Read More
