Ingredients

  • ¾ cup vegetable oil

  • ¼ cup applesauce

  • 3 eggs

  • 1 ¾ cups white sugar

  • 1 teaspoon vanilla extract

  • 2 cups all-purpose flour

  • 1 cup whole wheat flour

  • 1 teaspoon ground cinnamon

  • 1 teaspoon baking soda

  • 1 teaspoon salt

  • 3 cups peeled, cored and cubed apples

  • 1 cup chopped walnuts

Directions

  1. Preheat the oven to 300 degrees F (150 degrees C). Lightly grease two 9x5-inch loaf pans.

  2. Stir together oil, applesauce, eggs, sugar, and vanilla extract in a large bowl. Sift together flours, cinnamon, baking soda, and salt in a separate bowl. Gradually stir flour mixture into wet ingredients, mixing just until combined. Fold in apples and walnuts. Pour batter into the prepared pans.

  3. Bake in the preheated oven until a knife inserted in the center of a loaf comes out clean, about 70 minutes.
