- Bring water to a boil in a saucepan. Stir sugar into boiling water until dissolved. Remove from heat and allow to cool.
- Mash avocados with lime juice and sugar-water in a bowl until smooth. Stir mint through the avocado mixture. Pour into ice pop molds.
- Store in freezer until frozen solid, at least 3 hours.

I made them into freezer pops! My grandkids love avocados and I’m hoping they will love these. Very easy to make.
Really good. Agree with other reviewers that the mint is what makes it. Only issue was sticking in the popsicle mold, but I have no idea if that reflects on the recipe or my molds. Very, very go...
