Party Vegetable Sandwich Spread

  1. Combine grated carrots, chopped green bell pepper, minced onion, chopped cucumber, and chopped celery in a bowl. Mix well.
  2. Combine softened cream cheese, salt, lemon juice, and mayonnaise in a separate bowl and beat until fluffy. Fold vegetable mixture into cream cheese mixture and mix well.
  3. Cover and refrigerate at least 1 hour before spreading.

Delicious! I added a clove of garlic and used the food processor on the vegetables. Everyone at my party loved it as a dip, so I made more and have been using it to make sandwiches on croissants...

I used reduced fat cream cheese and mayo as well and then added 1 cup low-fat shredded cheddar. Super easy and tasty spread for buns or crackers
