I came up with this recipe when my husband decided to grow our own kohlrabi and I had never had it before. This makes a different but tasty slaw that will go well with most everything.

  • Whisk mayonnaise, vinegar, lemon juice, mustard, and sugar together in a bowl.

  • Toss kohlrabi and apples together in a large bowl; pour mayonnaise mixture over kohlrabi mixture and toss to coat. Season with salt and pepper.

I really enjoyed this slaw; it was a nice refreshing complement to our meal now that it is so warm outside. The only change I made was to use lime juice instead of lemon juice because that's what we had on hand. This will definitely be a go-to salad instead of the heaviness of macaroni and potato salads. This was really really good! We got some kohlrabi in our CSA and we were looking for a way to use it and this is definitely a great way to use it up! The only changes I made was to use Veganaise (we're vegan) and we omitted the lemon juice b/c we happened to be out of it but even if we had it I don't think it needs it! Surprisingly good. I made it because I got a bunch of kohlrabi and didn't know what to do with it. The homemade slaw dressing is yummy. Kohlrabi works a lot like jicama in this slaw. I will make it again when I get more kohlrabi. Read More
