Delicious Broccoli Cranberry Salad


Easy-to-make, super healthy salad. Perfect for picnics, parties, and family meals. The cranberries give it an extra tang. A real crowd pleaser!

  • 2 large heads broccoli, cut into florets

  • 1 cup dried cranberries

  • ½ small red onion, chopped

  • ½ cup chopped celery

  • 1 cup mayonnaise

  • ¼ cup white sugar

  • ¼ cup rice vinegar

  • cup cashews


  1. Mix broccoli, cranberries, onion, and celery in a large bowl. Whisk mayonnaise, sugar, and rice vinegar together in a bowl; pour over broccoli mixture. Toss to combine. Sprinkle with cashews just before serving.

Cook's Note:

If you're not a fan of raw broccoli, a good idea is, before cutting up the broccoli, to place the heads in boiling water for 3 seconds. This gets rid of the raw taste. The stalks may also be included if desired. It doesn't really affect the taste.
