Mango Mint Salsa
I cannot personally take very spicy foods, so take that into account when seasoning your salsa with ginger. A bit of a wuss in the spice department? Still add some ginger, about a knuckle worth. If you really like it spicy, use a lot of ginger or consider adding a spicy pepper. Also know the amounts listed above are suggestions. I used slightly less than half a white onion each time I made the recipe, and eventually I just took big handfuls of cilantro and mint. I promise you, it will still taste great.
