  1. Cream butter in a bowl until smooth; mix in cilantro, lime juice, and cayenne pepper until thoroughly combined. Cover and refrigerate 1 hour to blend flavors.
  2. Peel husks back from ears of corn starting at the top, leaving the husks attached at the bottom of the ears. Remove all the corn silk and close husks over the ears again. Cover corn ears with cold water in a large bowl until husks are thoroughly soaked, about 20 minutes.
  3. Preheat grill for medium heat and lightly oil the grate.
  4. Place the corn in husks onto the hot grate and grill covered until husks are charred and the corn kernels are tender, 20 to 25 minutes, turning often. Strip off husks and serve corn with cilantro lime butter.

No changes needed, I've heard but never did the sweet, hot combination, it was delish! Didn't realize but I did use zest thought it was in this recipe, do add!!

My family loved this!! I will be doing this all summer!

This was delicious but it did need some salt and pepper. The corn was nice and sweet but with the addition of the lime juice and cayenne gave it a bit of heat and tartness that just worked real...

I made this using bottled lime juice instead of fresh and thought it was amazing. Perfect amount for the corn too.

My hubby loved the cilantro butter so much that i always have it on hand now! Delicious with grilled corn but good on everything!

We absolutely loved this recipe. So easy to make and like other posters I had plenty left over. Just put it in the freezer (wrapped) and got it out of the freezer whenever we grilled corn on t...
