Family LOVED the cilantro lime butter for this recipe! Had plenty of butter left over, so I wrapped it in parchment paper, rolled into a "log" and saran wrapped it to freeze. Going to try this butter on steaks and other foods!

I followed this recipe exactly and thought it was very bland really didn't taste the lime at all IF I make it again I would at least triple the lime maybe also use so zest to ramp it up
We love corn prepared on the grill. This butter gave the corn a delicious fresh taste. We also used the leftover butter on some garlic bread and grilled fish. Thanks, BritanyRachelle for sharing your recipe. It is a winner in our house!
This was delicious but it did need some salt and pepper. The corn was nice and sweet but with the addition of the lime juice and cayenne gave it a bit of heat and tartness that just worked really well with the sweet corn. Will definately make this again!
No changes needed, I've heard but never did the sweet, hot combination, it was delish! Didn't realize but I did use zest thought it was in this recipe, do add!!
I only give it a four because I only used the butter part of. I took the husk off, wrapped in foil and threw it on the grill.

We really liked this! A nice twist to corn on the cob. We made a big batch of corn for the 4th of July party we had and this was a hit....minus the few non-cilantro lovers in the group. I do think it needs just a pinch of salt (not much because that’s the beauty of the lime/citrus) and i was extra cautious on the cayenne but I shouldn’t have been. A little more heat would have been nice. It makes a lot! I plan to use up by trying on other foods; possibly with potatoes or on a French Bread toasted in the oven. Would make this again!
The husks catch on fire and create a mess no matter how long they were soaked in water. The butter was excellent.
My hubby loved the cilantro butter so much that i always have it on hand now! Delicious with grilled corn but good on everything!

I used fresh coriander leaves instead, and it was fantastic.
I would change anchor powder and smoked paprika to either chipotle powder or using a canned (!) chipotle put through a blender. I keep the cans on hand and will blend up a can at a time, distributing the puree into an ice cube tray, and freezing it to keep 2tblsp at a time ready for my use. Mexican street corn flavors are wonderful!! Thank you for sharing your process!!
I thought 1 cup of butter for 8 ears of corn would be too much so I cut the recipe in half. But I added more than a pinch of cayenne also. Still there was very little taste to the butter mixture. Every guest said next time double the cilantro, cayenne and lime juice plus add the zest from the lime. The corn was delicious in the husks on the grill and saves a bunch of boiling water in the kitchen when cooking for a crowd. Hopefully the butter mixture will be more flavorful after I make the adjustments next time.
We absolutely loved this recipe. So easy to make and like other posters I had plenty left over. Just put it in the freezer (wrapped) and got it out of the freezer whenever we grilled corn on the cob. Fantastic!

I made this using bottled lime juice instead of fresh and thought it was amazing. Perfect amount for the corn too.
I used to live in South Texas close to the Mexico border and this brings back those crazy days of running across the border to shop, drink, and stop at an elote stand to get some corn. It taste almost the same! The only difference was that they used mayonnaise instead of butter and tamarido or lots of chille seasoning. I loved this recipe just the way it is, the butter is amazing and really good on skirt steak! Thanks!

I made this butter corn combo for 4th of july 2021. it was very good. a cup of butter was alot. I used the leftover butter the next day for a roasted chicken I put in the oven. very very good. the corn was a hit. the chicken was out of this work good. I may post my secret recipe...
I made this for July 4th using fresh cilantro from my garden. I left out the spicy ingredient. It turned out well.
