  1. Preheat oven to 350 degrees F (175 degrees C).
  2. Bring a medium saucepan lightly salted water to a boil; add chicken breasts and reduce heat to medium-low. Cover and gently simmer until chicken is no longer pink in the center, 15 minutes. Drain.
  3. Let chicken cool until it can be easily handled. Shred chicken with your hands; return to empty sauce pan. Stir barbeque sauce, parsley, and garlic into chicken.
  4. Lay 4 tortillas on a baking sheet. Evening spread chicken mixture among the 4 tortillas, leaving a 1-inch border around the outer edge. Top each tortilla with 1/4 tomatoes and 1/4 Cheddar cheese. Place another tortilla atop each filled tortilla.
  5. Bake quesadillas in the preheated oven until cheese is melted, 5 to 7 minutes. Cut into wedges to serve.

I just got a can of corn and black beans and added it to the recipe. It was really good. I just didn't add tomatoes because I don't like them so I just added the corn and black beans.

Thanks for a simply and yummy recipe! I had to leave some things out (since I didn't have any parsley or tomatoes) and added some sauteed onions (since I love onions). I was short on tortillas, ...

These were tasty! Only needed about 7 mins in the oven though

great way to use up leftover shredded chicken, mine baked in 8 minutes, used pepper jack cheese to add a little zing.

Something that makes it even more amazing is to swirl the bbq sauce with ranch dressing. Sounds weird, but SO GOOD! The tomato flavor doesn't fit quite as well though.

I carmelized a sweet yellow onion w a green granny smith apple thinly sliced! this was so good.

very good. will make again for sure

A great twist on the old chicken quesadilla. Great flavor from the barbecue sauce. Will definitely make these again. I used the spinach tortillas.

Easy to make and everyone in the house loved them. very delicious!
