  • Blend cucumber, zucchini, avocado, and garlic in a food processor or blender until very finely chopped, about 30 seconds.

  • Whisk together water, lemon juice, olive oil, and salt in a bowl.

  • Turn on the food processor and pour water mixture slowly through food processor's feed tube while processing cucumber mixture. Process until smooth, about 1 minute.

Cook's Note:

More water can be added to this recipe depending on how you like your soup. Some prefer it creamier while others would rather enjoy a thinner soup.

Wow so simple but so good. Honestly I just winged it and it was exceptional. I had no zucchini so I omitted that. I added a dash of cayenne a handful of cilantro then tasted it and added a bit more salt and lemon juice. Even my 11-year old liked it. Will wonders never cease?!:) Read More
