A flavorful recipe, inspired by a salad I had in Austin, Texas at a fancy restaurant. They added ahi in their version, but mine is vegetarian. It is great either way!

  • Arrange 1/4 of the grapefruit sections and 1/4 of the diced avocado decoratively on a salad plate. Top with 1/4 cup of sprouts. Repeat with remaining grapefruit sections, avocado, and sprouts to make 4 salads.

  • Mix lemon juice, olive oil, salt, and black pepper in a small bowl; drizzle dressing over each salad.

Cook's Note:

Add ahi tuna if you want to add some protein and make it a meal!

This is definitely light and refreshing and I will make it again with changes. I ended up serving this with shrimp sauteed in olive oil and old bay seasoning. It had a beautiful presentation. The only thing we were having trouble with was the acidity of the dressing I even added a teaspoon of agave to it to balance it out maybe it needed more or a pinch of sugar. We also thought serving it with some type of blackened seasoned fish would go well with this dressing. We will try that next time. Definitely has potential! Read More
