Spinach Fettuccine with Sausage, Peppers and Olives

  1. Remove sausage from casings and brown in skillet. Drain and reserve. Cook fettuccine according to package directions. Meanwhile, heat oil in large skillet. Add onion and cook 2-3 minutes. Add garlic and red pepper and cook 3-4 minutes.
  2. Add tomatoes and sausage and cook 4-5 minutes or until vegetables are crisp-tender. Stir in olives and basil. Drain pasta and toss with sausage mixture. Sprinkle with cheese.

I basically followed the recipe, except used mild Italian sausage (instead of hot), and a can of diced tomatoes (instead of fresh tomatoes) and we really enjoyed it. My husband likes the olives...
